Foliage: A clumping perennial that dies to the ground for winter, Levisticum erupts from the spring ground with beautiful pink-green foliage. It produces lush, fragrant foliage all summer that provides a flavourful substitute for celery. Hollow tall stalks elongate in late summer and can be pruned off to prolong the edible foliage season.
Flower: Umbels of yellow flowers top the tall stalks in late summer and seeds ripen from August to September - all edible and medicinal.
Soil: Average to poor, with excellent drainage; prefers moist soil but can tolerate drought. Deep, sandy soil encourages large, long roots - also edible and medicinal.
Garden site: Best in sun put doesn't mind some shade; grow in back of herb garden where it is a good companion to other herbs, and as a hedgerow.
