Allium fistulosum (Welsh or Bunching onion)
Allium fistulosum is a perennial onion that does not develop a large bulb and, if hilled up with soil over the summer months, will have a long white (blanched) shaft, desirable for cooking (best pulled when young). We grow these in the vegetable garden as a biennial, harvesting the seed produced in year 2 for ongoing sowing and sales. In another garden bed we treat Allium fistulosum as a perennial, allowing large colonies to sow themselves; these "green onions" are available for harvest year 'round.
