Atriplex hortensis 'Red Flash' (Red orach, Mountain spinach)
Colourful, edible, and high in vitamins. Use young leaves in salad; cook older leaves like spinach. Rich umami taste due to natural salts that concentrate in leaves. Do not grow this plant where artificial nitrates have been added to the soil as the plants' leaves will also retain these minerals.
